République, located in Mid-City, is owned by chefs Walter and Margarita Manzke along with their partner, restaurateur Bill Chait. Centered in the heart of Los Angeles, the iconic stone-colored brick building was originally erected in 1929 as Charlie Chaplin’s offices, which were later transformed (1981) into the seminal La Brea Bakery and Campanile.
République builds on this storied past with its latest incarnation, serving traditional and contemporary French-style cuisine in a gastronomic environment of history and grandeur, featuring open kitchens and a bakery, charcuterie counter and raw bar, along with one of the most dynamic wine lists in LA.
The space has been restored with original fixtures, period lighting, bar stools and reclaimed wood tables using materials from the same decade that the building was originally erected, while preserving and highlighting the classic architecture from the 1920’s structure.
